It wasn't until the arrival of the first sailing ships to reach New Zealand and then the missionaries and their metal pots did the using of flour take off amongst Maori. The early Maori prepared cooked their bread made from the nuts of the Hinau, Tawa, Raupo, Harakeke, Toi and other feeds from the forests.
